Avocado toast has taken the world by storm, and we're loving it. Not only does it look pretty, avocado is super good for you, and topping it with pomegranate adds a fresh zing that makes it that much tastier!

Avocados are a great source of healthy fats. Fats often get a bad rap for 'making you fat' but that’s a total myth. Cutting out an entire food group is much worse for your health than actually eating fats, and in fact, cutting out a food group is more likely to cause weight gain! They are rich in monounsaturated fats, which easily burned off for energy. Monounsaturated fats are proven to lower cholesterol levels too. Avocados also have a role to play in cardiovascular health, neurotransmitters and cell metabolism as they contain high amounts of potassium, choline and fatty acids.
Avocados contain tons of vitamins which play an important role in our health. They can help improve insulin sensitivity through vitamin K, which is great for those with PCOS. Avocados contain magnesium, which helps with muscle contraction and controls blood glucose levels. Avocados are also great for protecting the body from loss of bone density, also known as osteoporosis. Also, they have tons of vitamin C, which is great for protecting the overall immune system.
Adding pomegranates to this avocado toast adds a pop of zing to each bite, and it makes it look pretty too! Pomegranate seeds are known for their mass amounts of antioxidant polyphenols. Antioxidants are nature's way of providing cells with defences, which helps the body resist cell damage and ageing. Pomegranate's antioxidants can help inhibit the growth of various cancer cells, including breast and prostate cancer cells. These antioxidants can also help with inflammation in the body. This is why pomegranate seeds are great for those with PCOS. These antioxidants are also great for the heart, because they lower blood pressure, reverse the growth of plaque forming in the arteries and improves blood flow.

Avocado Toast with pomegranate

Ingredients
1 piece brown bread, toasted
1/2 avocado
Fresh lemon juice, to taste
Salt & pepper, to taste
Handful pomegranate seeds
Directions
In a small bowl, smash together the avocado, and add the lemon, salt and pepper. Mix well.
On a piece of toasted bread, spread the avocado mixture
Sprinkle with pomegranate seeds, and enjoy!
