You can swap out the arugula for any other leafy greens, like spinach, lettuce, or kale. Goat Cheese Salad with Chicken and Beets

Serves: 1
Ingredients
2 cups arugula or salad greens of choice
2 oz. goat cheese
4 - 6 basil leaves, torn
1 small beet, sliced into half moons
¼ avocado
4 oz. chicken, cooked
2 teaspoons balsamic vinegar
1 teaspoon extra virgin olive oil
Himalayan pink salt
Fresh cracked black pepper
Your favourite salad seasonings, e.g. oregano, garlic, chilli flakes
Directions
Add all the ingredients to a salad bowl and toss with the vinegar, oil, and seasonings. Enjoy!
Tips & Serving Suggestions
There are several ways to cook beets, and you can learn how here. You can eat them raw, but we prefer roasting them!
You can use leftover cooked chicken or a rotisserie chicken, or you can grill or roast it in the oven. They all taste great in this recipe!
For the greens, you can use baby spinach or lettuce which would be delicious too!
Remember, eating healthy doesn't have to look boring!
