Goat Cheese Salad with Chicken and Beets!


This is a delicious and colorful salad, packed with flavor, protein, dairy and veggies! It's one of our favorites, and we're sure you'll love it too!


The beets in this recipe not only add texture and a beautiful color, but are actually very good for you! Beets have a number of nutrients that fight inflammation, lower blood pressure, and contain tons of vitamin C. They also may combat cancer and lower risks of stroke. Beets are also great for detoxification and fighting inflammation. Their gorgeous purple color also makes sure you're always eating a rainbow!


In addition to the fresh and aromatic flavor basil adds to this salad, it has incredible health benefits. It contains high levels of vitamins A, C and K, iron, manganese and magnesium, all of which prevent cell damage from radiation and oxygen.


You can swap out the arugula for any other leafy greens, like spinach, lettuce, or kale. All these greens are great sources of vitamin A, potassium and fiber, all of which are necessary components of a nutritious diet. They're also the base for this salad, so you can even mix different types of greens for a variety of textures and colors!


The avocado adds healthy fats to this salad, which are important for a nutritious diet. It's also super versatile, and is a delicious, creamy addition to any salad! Avocados contain dietary fiber, which our bodies need for a healthy digestive tract. They also contain monounsaturated fats, which are good for increasing healthy cholesterol in the body. In addition to all this, they contain lots of vitamins and potassium!

Goat Cheese Salad with Chicken and Beets

Total Time: 5 mins

Serves: 1

Ingredients

  • 2 cups arugula or salad greens of choice

  • 2 oz. goat cheese

  • 4 - 6 basil leaves, torn

  • 1 small beet, sliced into half moons

  • ¼ avocado

  • 4 oz. chicken, cooked

  • 2 teaspoons balsamic vinegar

  • 1 teaspoon extra virgin olive oil

  • Himalayan pink salt

  • Fresh cracked black pepper

  • Your favourite salad seasonings, e.g. oregano, garlic, chilli flakes

Directions

  1. Add all the ingredients to a salad bowl and toss with the vinegar, oil, and seasonings. Enjoy!

Tips & Serving Suggestions

  • There are several ways to cook beets, and you can learn how here. You can eat them raw, but we prefer roasting them!

  • You can use leftover cooked chicken or a rotisserie chicken, or you can grill or roast it in the oven. They all taste great in this recipe!

  • For the greens, you can use baby spinach or lettuce which would be delicious too!


Remember, eating healthy doesn't have to look boring!
