Spinach & Egg Scramble
Total time: 5-10 minutes
1 teaspoon extra virgin olive oil
2 pasture-raised egg whites
1 whole pasture-raised egg
2 cups spinach
½ cup radishes
1 teaspoon chia seeds
1 whole wheat pita
Heat oil in a pan on medium heat. In a bowl, whisk together egg whites, whole egg and chia seeds.
Pour egg mixture into pan. Continuously fold in the eggs until they set.
Add spinach and radishes to the eggs. Fold eggs over in pan until slightly firm.
Toast pita and top with eggs and spinach. Enjoy!
